Join us for an immersive chocolate tasting experience guided by Mary Luz Mejia, Canada’s first Level III-certified taster from the International Institute of Chocolate and Cacao Tasting. This thoughtfully curated session explores a selection of exceptional, Canadian-made and award-winning bean-to-bar chocolates, with a focus on origin, seasonality, and flavour.

The tasting flight is designed to highlight a range of profiles:

  • A bright, fruit-forward origin
  • A nutty, rounded expression
  • A floral, delicate profile
  • An unexpected creation, featuring distinctive inclusions such as tea, spruce, or rose

Guests will be introduced to the professional tasting methodology of the IICCT, using a structured tasting grid, a practical tool that offers far greater insight than a traditional tasting wheel. You’ll learn how to evaluate chocolate as experts do, identifying flavour, texture, and aromatic complexity.

Come with an appetite: you’ll be tasting all throughout the class! The class doesn’t end when you leave Nadège’s: you take home and share with your loved ones your masterpieces… and all the recipes to recreate this moment over and over again. We’re generous with our time: schedule an additional 20 minutes at the end of the class to benefit from the Chefs answering all of your questions and to finish tasting all the products. Classes are not refundable but exchangeable up to 7 days before each event. If we have less than 10 people in the workshop, it will be cancelled. You will be notified.
